Peppermint (Mentha piperita) Peppermint is known for its high concentration of menthol, which offers intense coolness, a clean aroma, and a slight feeling of decongestion in the breath. It also contains isomenthone, limonene, and 1,8-cineole, which contribute to its characteristic profile. (see the Recipes article)   Ino order to properly extract the bioactive substances:   Boil fresh water and let it cool for 1 minute (~90°C). Fresh water contains a higher concentration of dissolved oxygen, which contributes to the final taste of the tea. Add 1 herbal tea bag per 350 ml of water. Leave for only 3-4 minutes. Prolonged steeping will have negative effects as tannins and phenolic acids will be extracted, resulting in less aroma and more bitterness. Strain immediately and optionally add honey, lemon, or another sweetener. To maximize antioxidant retention, avoid boiling – according to studies, infusion in hot but not boiling water better protects essential oils.
